Tailor-made scald- and sour dough system delivery to Russia
The large scale delivery is in its installation phase at Yekaterinburg, JSC "SMAK" bakery. Delivery includes three seperate production lines for rye- and wheat scald and sour dough preparation and dosing.
The production lines are designed in co-operation with the customer based on their needs and requirements. Entire process is automated from raw material dosing and fermentation to liquid based pre dough dosing. Automation adjusts temperature, fermentation time and enables alterations to recipes. Co-operation with the customer has been very smooth and despite the COVID-19 restrictions, project timeline has not been compromised.
